Zucchini Julienne (Serves 4)

Just cut narrow strips of zucchini the size of matchsticks for this interesting quick summertime vegetable recipes. Yellow summer squash also works well with this recipe. Quick! Easy! Tasty!

2 tablespoons olive oil or vegetable oil
1 medium onion, thinly sliced
1 pound zucchini cut in julienne strips (4 cups)
1 tablespoon sesame seeds
1 tablespoon soy sauce
Salt and pepper to taste, as desired

1. In large skillet, heat oil.

2. Quickly sauté onion and zucchini until lightly browned and crisply done.

3. Stir in sesame seeds and soy sauce.

4. Salt and pepper, if desired.

5. Serve immediately.
