Sweet Potatoes with Dried Cranberries (Serves 8)

These cranberry-studded mashed sweet potatoes would be a wonderful vegetable suggestion to serve with poultry or pork. My friends in Wisconsin refer to dried cranberries as “craisins”. It really doesn’t matter which term you use, they are a coveted ingredient.

3 pounds sweet potatoes, peeled and cut into chunks
1/4 cup maple syrup
1 tablespoon grated peeled fresh ginger
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup dried cranberries
1/3 cup chopped pecans, toasted

1. In medium saucepan, cook sweet potatoes in small amount of boiling water until tender. Drain.

2. In large mixing bowl, mash cooked sweet potatoes.

3. Add maple syrup, grated fresh ginger, salt, black pepper, dried cranberries and chopped pecans.

4. Place mixture in 1 and 1/2-quart oven safe casserole.

5. Bake covered in preheated 350 degree oven 15-20 minutes until piping hot.
