Roasted Sweet Potatoes and Onions (Serves 8)

This interesting vegetable combination roasts to perfection in a 425 degree oven. Good quality fresh sweet potatoes usually are available now when the spring sweet onion crop arrives at your favorite supermarket.

4 medium peeled sweet potatoes cut into 2-inch pieces
   (about 2 and 1/2 pounds)
2 medium Vidalia or other sweet onions, cut into 1-inch
   pieces (about 1 pound)
2 tablespoons extra-virgin olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt

1. In 9x13-inch baking pan combine sweet potatoes and     onion; toss to mix.

2. Sprinkle vegetables with olives oil, garlic powder and     salt; toss to coat vegetables with oil.

3. Roast in preheated 425 degree oven 35 minutes or until     tender, stirring occasionally.

4. Serve with ham, pork or poultry.
