Red Cabbage with Apples (Serves 6)

All it takes is a head of red cabbage along with apples to create this colorful vegetable dish. It’s a nice change of pace from raw cabbage slaw and is pleasingly flavorful. Try serving this combination with pork or poultry.

1 small head red cabbage, shredded (about 2 pounds in weight)
3/4 cup boiling water
3 large cooking apples, cored, peeled and sliced
2 tablespoons butter or margarine
1/4 cup cider vinegar
1 and 1/2 teaspoons flour
1/4 cup brown sugar
1 teaspoon salt
Dash of black pepper

1. Place shredded cabbage in a large saucepan; add boiling water.

2. Cover and simmer for 10 minutes.

3. Add apples; cook 10 more minutes or until apples are tender.

4. Add butter, vinegar, flour, brown sugar, salt and pepper.

5. Heat until piping hot, stirring occasionally.

6. Serve.
