Quick Scalloped Potatoes (Serves 4-6)

Actually this is my basic scalloped potato recipe. I find convenience soup produces a superior product with lots of flavor. Great for family and company meals as these potatoes hold well.

1 (10 and 3/4-ounce) 98% fat free cream of celery or cream of mushroom soup
2/3 cup fat free milk
4 cups thinly sliced potatoes
1 tablespoon butter
Dash paprika

1. In small bowl, blend together soup, milk, and pepper.

2. Arrange alternate layers of potatoes and soup mixture in 2-quart casserole. Dot with butter; sprinkle with paprika.

3. Cover; bake in preheated 375 degree oven 1 hour. Uncover; bake 15 minutes more.
