Marinated Zucchini (Serves 8)

When zucchini plants produce an abundant supply, this tasty salad is a welcome recipe. The flavorful marinade is designed perfectly for fresh slices of zucchini.

3 medium zucchini, thinly sliced (6 cups)
1/3 cup cider vinegar
1/4 cup sweet pickle relish
2 tablespoons chopped onion
3 tablespoons canola oil
1 (2-ounce) jar diced pimiento, drained
1/2 teaspoon salt
1/8 teaspoon ground pepper
1/8 teaspoon garlic powder

1. Place sliced zucchini in bowl or resealable plastic bag.

2. Combine vinegar, pickle relish, onion, oil pimiento, salt,     pepper and garlic powder.

3. Pour mixture over zucchini; toss to coat zucchini.

4. Cover and chill at least 8 hours to develop.
