Gingered Winter Squash (Serves 6)

Candied ginger is the hidden ingredient in this first class recipe for winter squash. Both butternut and buttercup squash work very well in this tasty idea. Candied ginger is sometimes labeled “crystallized ginger” and can be found with the spices in the baking aisle of your favorite grocery store.

4 cups mashed cooked winter squash (like butternut or buttercup)
2 tablespoons butter, melted
1 tablespoon maple syrup
2 tablespoons chopped candied ginger
1 teaspoon salt
1/4 teaspoon ground pepper
1/8 teaspoon ground nutmeg

1. In large mixing bowl, combine squash with butter and syrup.

2. Stir in the ginger, salt, pepper and nutmeg.

3. Pour mixture into a greased 1 and 1/2 quart casserole.

4. Bake in preheated 350 degree oven for 30-40 minutes until piping hot. Serve.
