Pimiento Cheese Spread (Makes 1 and 1/2 cups)

Here is a Midwest version of the southern favorite Pimiento Cheese Spread. It doesn’t take long to mix together these flavor filled ingredients. Serve with celery sticks or high quality crackers.

1 and 1/2 cups shredded sharp cheddar cheese
1 (4-ounce) jar diced pimientos, drained and finely chopped
1/3 cup light or regular mayonnaise

1. In medium mixing bowl, combine cheese, pimientos and mayonnaise.

2. Stir to thoroughly combine.

3. Refrigerate for at least an hour to develop flavors.
