A February 2012 Recipe of the Month

These healthy recipes are just waiting to be incorporated into your cooking plans. All of these ideas are tasty and filled with good nutrition.

Lemon Sauce (Makes 1 and 1/4 cups)

The hint of nutmeg in this wonderful lemon sauce imparts an in-depth flavor worthy of your consideration.

1/3 cup sugar
1 tablespoon cornstarch
1 cup boiling water
1 tablespoon butter or margarine
1 and 1/2 tablespoons lemon juice
1/2 teaspoon ground nutmeg
1/4 teaspoon salt, if desired

1. Mix sugar and cornstarch in saucepan; gradually add boiling water, stirring constantly. Cook and stir until thickened and mixture is well blended.

2. Remove from heat; add butter, lemon juice, nutmeg and salt, if desired.

3. Heat to blend flavors and serve warm over cakes without icing or gingerbread
