Breakfast Burritos (Serves 4)

Scrambled eggs get all dressed up when they are wrapped in tortillas. This popular breakfast entrée is certain to get rave reviews.

2 tablespoons butter or margarine
1/2 cup chopped green pepper
1/2 cup chopped onion
6 eggs
3/4 cup salsa, mild, medium or hot, divided
1/2 teaspoon garlic salt
1/2 teaspoon ground cumin
1 and 1/2 cups shredded Monterey Jack cheese, divided
8 ( 6-inch) flour tortillas

1. In 2-quart microwave-safe casserole, melt butter on Full Power in the microwave oven for 20-30 seconds until melted.

2. Add green pepper and onion. Microwave on Full Power 2-3 minutes until vegetables are tender, stirring once or twice.

3. Add eggs, 1/4 cup salsa, garlic sat and cumin. Stir with a fork to evenly combine mixture. Microwave on Full Power 4-5 minutes, until eggs are set, stirring once or twice. Stir in one cup of cheese.

4. Fill tortillas with egg mixture. Top each burrito with some of the remaining cheese and salsa. Heat to melt cheese, if you wish.
