Vegetable Ham Chowder

Usually soup recipes make such a large quantity and take such a long time, they are off limits to those cooking for just one or two. But, look at this tasty recipe. It’s designed to serve just two and is quick and easy too. Substitute vegetables of your choice, if frozen mixed vegetables aren’t available.

1 cup frozen mixed vegetables
1 tablespoon chopped onion
1 (8-ounce) can cream-style corn
1 cup cubed lean ham
3/4 cup milk
1 teaspoon chicken base or bouillon
1/4 cup shredded sharp Cheddar cheese
Dash of pepper

1. In 1-quart microwave-safe casserole combine mixed vegetables and onion. Cover with lid or vented plastic wrap.

2. Microwave on Full Power 4-6 minutes or until vegetables are tender, stirring once.

3. Stir in corn, ham, milk, chicken bouillon, cheese and pepper.

4. Microwave, uncovered, on Full Power 4-5 minutes or until thoroughly heated, stirring once.
