Turkey Minestrone (Serves 10)

Chuck full of vegetables, this heart healthy soup, is a good suggestion for an interesting soup to prepare as cool days welcome autumn. As a time saver, I often purchase coleslaw mix to use in place of the shredded cabbage. If you still have tomatoes and green beans from the garden, substitute fresh for the canned or frozen.

1 pound ground raw turkey
1/2 cup chopped onion
5 cups water
2 tablespoons beef bouillon granules or beef base
2 cups shredded cabbage
1 cup diced carrots
1 cup diced zucchini
1 (14.5-ounce) can whole tomatoes, crushed
1/4 teaspoon garlic powder
1 teaspoon basil leaves
1 (10-ounce) package frozen cut green beans
1/4 cup snipped fresh parsley
Salt and Pepper to taste

1. Spray bottom of Dutch oven with vegetable spray.     Crumble ground turkey into Dutch oven. Add onion.

2. Cook over medium heat until turkey is cooked and     onion is tender. Drain.

3. Stir in water, beef bouillon, cabbage, carrots, zucchini,     tomatoes, garlic powder and basil.

4. Bring mixture to a boil. Reduce heat and simmer 15-20     minutes until vegetables are tender.

5. Stir in beans and parsley. Simmer until beans are     cooked.
