Taco Soup (Serves 6)

This family friendly soup is equally delicious using either ground beef or textured vegetable protein. Look for the textured vegetable protein in the freezer case at your favorite grocery store.

1 pound lean ground beef or 2 cups precooked textured vegetable protein
1/4 cup chopped onion
3 cups water
1 (15-ounce) can whole kernel corn, drained
1 (14.5-ounce) can diced tomatoes with liquid
1 915-ounce) can black beans, drained and rinsed
1 (8-ounce) can tomato sauce
1 (1.25-ounce) package taco seasoning mix
Tortilla chips and shredded sharp Cheddar cheese for toppings, if desired

1. If you are using ground beef, brown the ground beef and onion in a large saucepan and drain. If you are using textured vegetable protein it does not need to be browned.

2. In large saucepan combine, browned ground beef with onion or textured vegetable protein and onion with water, corn, tomatoes, black beans, tomato sauce and taco seasoning mix.

3. Cover and simmer for 15 minutes, stirring occasionally.

4. Serve with tortilla chips and/or shredded sharp Cheddar cheese.
