Quick and Easy Cheese Soup (Serves 12)

All of these ingredients can be kept on your cupboard shelf all ready to be used at any moment. This tasty soup is certain to bring lots of requests for this recipe.

2 cups chicken broth or 2 cups water and 2 teaspoons chicken bouillon
1 (15.25-ounce) can whole kernel corn, drained
1 (15-oucne) can cannellini or pinto beans, rinsed and drained
1 (14.5-ounce) can diced tomatoes, undrained
1 (10-ounce) can premium chunk white chicken, broken apart & undrained
1 (4-ounce) can chopped green chilies
1 pound processed American cheese, cubed
Crushed tortilla chips for garnish, if you wish

1. In a large soup kettle, combine the broth with the corn, beans, tomatoes, chicken, chilies and cheese.

2. Cook and stir until cheese is melted and soup is hot.

3. Garnish with tortilla chips, if you wish.

Note: Two cups of cubed cooked chicken may be used in place of the canned chicken, if you wish.
