Pasta Italian Soup (Serves 10)
If you are partial to Italian flavors, this soup is for you. Once the ground beef is browned, it doesn’t take long to add the other ingredients. Just bring to a boil, and simmer for a few minutes until pasta is tender.
1 pound lean ground beef
1 large green pepper, chopped
1 medium onion, minced
2 garlic cloves, minced
8 cups water
2 tablespoons plus 2 teaspoons beef base or beef bouillon granules
2 (14.5-ounce) cans diced tomatoes, undrained
1 (8-ounce) can tomato sauce
1/4 cup tomato paste
1 cup frozen corn
2 teaspoons Italian seasoning
1/4 teaspoon ground pepper
2 and 1/2 cup rotini pasta
1/2 cup shredded Parmesan cheese
1. In a large saucepan, cook the ground beef, green pepper, onion and garlic over medium heat until meat is no longer pink; drain.
2. Stir in water, beef base or beef bouillon, tomato sauce, tomato paste, corn Italian seasoning and pepper.
3. Bring to a boil. Stir in pasta. Return to a boil. Reduce heat;
cover and simmer for 10-12 minutes or until tender.
4. Serve sprinkled with shredded Parmesan cheese.
