Mushroom Soup (Serves 6)
Here is an excellent example when “fresh is best” What
a great feeling you’ll experience as you transform one pound of
fresh mushrooms into this perfectly wonderful soup. Treat your family
and friends soon.
1/4 cup butter or margarine
1 and 1/2 cups chopped green onions with tops
1 pound fresh mushrooms, sliced
1/4 cup plus 2 tablespoons flour
1/4 teaspoon ground white pepper
3 cups water
3 cups milk
4 teaspoons instant chicken bouillon or chicken base or 4 chicken bouillon
1. In Dutch oven, melt butter. Sauté onion in butter until tender,
3 o r 4 minutes.
2. Add mushrooms, and sauté 2 or 3 minutes.
3. Stir in flour and white pepper; cook over medium heat, stirring constantly,
4. Gradually add water, milk, and chicken bouillon or base, stirring
until smooth; bring mixture just to a boil over low heat, stirring constantly.
