Microwave Bread and Butter Pickles (Makes 3 cups)

If you have just a few cucumbers or if canning an entire batch of Bread and Butter Pickles sounds like too much work, do try this delicious microwave version of this family friendly pickle. They are outstanding.

2 cups thinly sliced cucumbers
3/4 cup thinly sliced onion
1/2 cup sugar
1/2 cup white distilled vinegar
1 teaspoon salt
1/2 teaspoon mustard seed
1/4 teaspoon celery seed
1/4 teaspoon turmeric

1. In 2-quart microwave-safe bowl, combine cucumbers onion, sugar, white vinegar salt, mustard seed, celery seed and turmeric. Stir well.

2. Microwave on Full Power 7-9 minutes, stirring twice during cooking time. Cucumbers will be crisp and onions translucent.

3. Keep covered in the refrigerator and use within two weeks.
