Fruity Rhubarb Sauce (Makes 5 cups)

This delicious rhubarb sauce is definitely an upgrade from plain old rhubarb sauce. It’s wonderful served as sauce or as a topping to ice cream, angel food cake, pound cake, etc.

4 cups chopped fresh or frozen rhubarb
1 cup raisins
1 cup sugar or Splenda
1/2 cup water
1 (8-ounce) can unsweetened crushed pineapple, undrained (1 cup)
1 cup chopped fresh strawberries

1. In large saucepan, combine rhubarb, raisins, sugar and water. Bring to a boil.

2. Reduce heat; simmer, uncovered, for about 20 minutes or until rhubarb is tender. Remove from heat.

3. Fold in pineapple and strawberries.

4. Serve warm or chilled as sauce or over ice cream, angel food cake, pound cake, etc.
