Confetti Cheese Spread
This tasty cheese spread, seasoned with Italian herbs and speckled with
green onions and pimiento is so flavorful that it calls for a mild cracker..
(Makes 64 half tablespoon servings)
1 (8-ounce) package light cream cheese (Neufchatel), softened
1 cup shredded low-moisture part-skim mozzarella cheese
3 green onions, thinly sliced
1/2 teaspoon dried Italian seasoning
Pinch to 1/8 teaspoon cayenne pepper, depending on taste
1 (2-ounce) jar chopped pimiento, well drained
1. In large mixing bowl, beat together with electric mixer cream cheese,
mozzarella cheese, green onions, Italian seasoning and cayenne pepper.
2. Stir in pimiento.
3. Store, chilled, in covered containers.
4. Serve on low-fat crackers.
