Blueberry Sauce (Makes 2 and 1/2 cups)

It’s the pineapple juice that distinguishes this lovely blueberry sauce from all the others. Serve a small amount of this sauce over panna cotta and use the rest for topping off waffles or pancakes.

1/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1/2 cup unsweetened pineapple juice
1/4 cup water
2 cups fresh or frozen blueberries
1/4 teaspoon grated lemon peel
1 teaspoon lemon juice

1. In 2-quart microwave-safe measurer, combine sugar, cornstarch and salt. Mix well.

2. Add pineapple juice and water. Stir to combine ingredients.

3. Stir blueberries into juice mixture.

4. Microwave on Full Power 6-8 minutes, stirring every two minutes until mixture thickens. Cool slightly.

5. Serve over Panna Cotta, waffles, pancakes, angel food cake, ice cream, etc.
