Black Bean Salsa (Makes 8 half-cup servings)

This tasty salsa is as delicious as it is healthy. One bite and you’ll want another and another. It’s a great suggestion for your next tail gate experience.

1/4 cup balsamic vinegar
1/4 cup cider vinegar
2 tablespoons brown sugar
1 and 1/2 teaspoons fresh lime juice
1/2 teaspoon ground cumin
1/4 teaspoons salt
1 garlic clove, minced
1 cup fresh or frozen whole kernel corn
1 cup chopped red pepper
3/4 cup chopped onion
1/3 cup minced fresh cilantro
1 (15-ounce) can black beans, rinsed and drained

1. In saucepan, bring balsamic vinegar, cider vinegar, brown sugar, lime juice, cumin, salt and garlic to a boil. Reduce heat and simmer 2 minutes or until sugar dissolves. Cool slightly.

2. In large mixing bowl, combine corn, red pepper, onion, cilantro and black beans.

3. Add dressing and stir thoroughly.

4. Cover and chill to develop flavors.
