Baked Polynesian Cranberries (Serves 10)

Here is a very simple way to create an extra-ordinary cranberry side dish. The pecans and coconut take center stage while a subtle hint of the orange marmalade teases the taste buds.

4 cups fresh or frozen cranberries
1 cup chopped pecans
1 cup flaked coconut
1 cup orange marmalade
3/4 cup sugar
1/2 cup water

1. In large bowl, combine cranberries pecans, coconut, marmalade, sugar and water.

2. Pour into a greased 8x12-inch baking dish.

3. Bake, uncovered, in preheated 350 degree oven for 25-35 minutes or until cranberries are tender, stirring gently once during baking time.

4. Serve warm or cold. Store in the refrigerator.
