Seafood Salad Louise (Serves 8)
This main dish salad may remind some cooks of a popular salad called Crab Louis. With the addition of shrimp and hard cooked eggs, this exciting salad will please your taste buds.
1 (5-6 ounce carton) fat free Greek plain yogurt or regular nonfat plain yogurt, drained
2 tablespoons seafood cocktail sauce
2 tablespoons sweet pickle relish
1-2 tablespoons chopped fresh parsley
1 (8-ounce) package flake style imitation crab, cut into small pieces or 1 (8-ounce) can lump crab meat, drained
1 (8-ounce) package frozen small salad style shrimp, thawed
3 hard cooked eggs
Salt and pepper to taste
Lettuce leaves for garnish, if you wish
1. In a large medium mixing bowl, whisk together the yogurt, cocktail sauce, pickle relish and fresh parsley.
2. Add crab, shrimp and two of the hard cooked eggs which have been chopped.
3. Season with salt and pepper to taste.
4. At serving time, arrange salad on lettuce leaves and garnish with the remaining hard cooked egg which has been sliced.
