Glazed Salmon (Serves 4)

Here is a simple tasty way to prepare salmon. The smoke-like flavor comes from ground cumin. It’s an easy recipe to cut in half when serving just two.

4 (6-oz.) salmon fillets
1/4 teaspoon salt
1/8 teaspoon ground pepper
2 tablespoons brown sugar
2 tablespoons lemon juice
2 tablespoons Dijon mustard
1 teaspoon ground cumin

1. Place salmon on parchment lined or greased 7x11-inch baking dish; sprinkle with salt and pepper.

2. Combine brown sugar, lemon juice, Dijon mustard and cumin; spoon mixture over filets.

3. Bake, uncovered, in preheated 400 degree oven for 10-15 minutes or until fish flakes easily with a fork.
