Sunshine Gelatin Salad (Serves 6)
Lemon gelatin with pineapple and carrots is an old-fashioned favorite recipe, but the addition of vinegar and salt gives the recipe new dimensions.
1 (3-ounce) package lemon flavored gelatin
1 cup boiling water
1 (8-ounce) crushed pineapple packed in juice
1 tablespoon vinegar
1/2 teaspoon salt
1 cup grated carrots
1/3 cup chopped pecans
1. Dissolve gelatin in boiling water.
2. Drain pineapple, reserving juice. Add water to juice to make 1 scant cup, add to gelatin with vinegar and salt. Chill until partially set.
3. Fold carrot, pineapple and pecans into gelatin. Turn into lightly oiled 4 cups salad mold or pretty bowl.
4. Chill until firm.
