Sunny Fruit Salad (Serves 8)

This quick and easy fruit salad reminds me of the old-fashioned 24 hour fruit salad that my mother used to make. However, the use of instant pudding mix eliminates the need for cooking a dressing and allowing time for it to cool. Kids love this recipe.

1 (20-ounce) can juice pack pineapple tidbits or chunks
1 (3.4-ounce) package instant vanilla pudding mix
1 (11-ounce) can mandarin oranges, drained
2 cups red or green grapes
1 and 1/2 cup miniature marshmallows
1 cup thawed frozen whipped topping

1. In mixing bowl, drain pineapple. Set pineapple aside.

2. Add pudding mix and whisk until thickened.

3. Add drained pineapple, mandarin oranges, grapes and marshmallows to custard mixture. Stir to combine.

4. Fold in whipped topping.

5. Serve immediately or chill until serving time.
