Pineapple Waldorf Salad (Serves 8)

Most busy cooks are always looking for palate pleasing fruit salad combinations. This lovely grouping of fruits features a handy carton of strawberry yogurt to dress the salad to perfection. It’s the perfect addition to a brunch, lunch or even a dinner menu.

1 (20-ounce) can pineapple tidbits or chunks, packed in juice, drained
1 orange, peeled sectioned and cut into bite-size pieces
1 red apple, unpeeled, cored and coarsely chopped
1 cup chopped celery
1 cup strawberries, hulled and sliced
1/4 cup chopped walnuts or pecans
1 banana, sliced
1 (6-ounce) carton non-fat strawberry yogurt
Fresh mint for garnish when available

1. In large mixing bowl, combine drained pineapple, orange, apple, celery, strawberries and walnuts. Chill, if time permits.

2. At serving time add sliced banana to other fruits. Toss gently.

3. Add yogurt and toss gently to coat fruit mixture with yogurt.

4. Put into pretty serving bowl and garnish with fresh mint leaves when available.
