Orange Salad with Honey Dressing (Serves 8)

It’s such fun to make first class salad dressings using ingredients found in your kitchen. This excellent example is both pretty and palate pleasing when drizzled over oranges and greens.

1/3 cup sugar
2 and 1/2 tablespoons lemon juice
2 and 1/2 tablespoons honey
2 tablespoons vinegar
1/2 teaspoon dried mustard
1/2 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon celery seeds
1/2 cup canola oil
Salad greens
5 novel oranges, peeled and sliced in circles

1. In container of blender or food processor, combine     sugar, lemon juice, honey, vinegar, mustard, paprika,     salt and celery seeds.  Process until mixture until it is     smooth. 

2. While blender or food processor is running, slowly pour     oil through the opening in the top; continue to process a     few seconds until mixture is in suspension.  Cover and     chill.

3. At serving time, line individual salad plates with salad     greens; arrange orange slices on greens and drizzle with     dressing.
