Orange-Carrot Slaw (Makes 8 1/2 cup servings)

To save time and effort, many cooks like to purchase the pre-shredded carrots for this figure-flattering slaw. The addition of oranges and grapes adds just the right amount of sweetness to this salad.

3 cups shredded carrots
1 (11-ounce) can mandarin orange segments, drained
1 cup halved seedless green grapes
1/2 cup low-fat orange yogurt
1 teaspoon cider vinegar
1/4 teaspoon ginger

1. In mixing bowl, combine carrots, mandarin oranges and grapes. Toss together lightly.

2. In small bowl, combine orange yogurt, vinegar and ginger; blend well.

3. Pour dressing over salad; mix thoroughly.

4. Serve immediately, or cover and refrigerate until serving time.
