Melon Surprise (Serves 6)

This pretty fruit recipe could actually be served as either a salad side dish or dessert. Either sugar-free or regular gelatin will work out perfectly.

1 large cantaloupe
1 (3-ounce) package strawberry gelatin or 1 (0.3-ounce) package sugar free strawberry gelatin
1 cup boiling water
1/2 cup unsweetened applesauce
1 cup sliced fresh strawberries

1. Cut melon in half lengthwise from bud to stem end and discard seeds.

2. Cut a thin slice off the bottom of each half so melon sits level; pat dry.

3. In a bowl, dissolve gelatin in boiling water. Stir in applesauce and strawberries.

4. Pour gelatin mixture into melon halves. (Save any extra gelatin for a quick treat sometime later.)

5. Cover with plastic wrap and refrigerate overnight.

6. Just before serving, slice each melon half into 3 wedges.
