Marinated Vegetables with Feta Cheese (Serves 20)

Feta cheese is the star in this mouth watering marinated vegetable combination. It’s a crowd pleasing recipe that is great for summertime family reunions and picnics.

1 bunch broccoli, small flowerettes, only
1 head cauliflower, broken into small flowerettes
1 (6-ounce) can pitted ripe olives, drained
1 (7-ounce) jar stuffed green olives, drained
8 ounces feta cheese, crumbled
1 pint grape or cherry tomatoes
1 cup reduced-fat Italian salad dressing

1. In large bowl or resealable plastic bag, combine broccoli,     cauliflower, ripe olives, stuffed olives, feta cheese,     tomatoes and salad dressing.

2. Gently toss to coat all ingredients with salad dressing.

3. Marinate in refrigerator at least 8 hours, tossing     occasionally to distribute marinade over vegetables.
