Marinated Asparagus Salad (Serves 4)

This mixture could easily win a five star award when it comes to eye appeal. Add to that winning status full bodied flavor, this idea is destined to become part of your permanent recipe file.

2 cups cut-up fresh asparagus
8 grape or cherry tomatoes, halved
1/2 cup diced yellow bell pepper
1/4 cup sliced ripe olives
1/2 cup prepared light or regular Italian salad dressing

1. Cook asparagus in rapidly boiling water for 3-4 minutes or until crisp tender; drain. Plunge into ice water to chill. Drain again.

2. In self-sealing plastic bag or non-metal bowl, combine asparagus, tomatoes, pepper, ripe olives and dressing

3. Toss gently to coat vegetables evenly with dressing.

4. Seal bag or cover; refrigerate 1-2 hours to blend flavors.
