Lime Pineapple Salad (Serves 6) To complete my St. Patrick’s Day menu, I enjoy serving a green gelatin salad like this one. It’s a family favorite that my Mother often made back home on our Wisconsin farm, so brings back fond memories of my “growing up” years. This salad is so delicious, I often double the recipe. 1 (3-ounce) package lime flavored gelatin1 cup boiling water 1/2 cup light or regular salad dressing or mayonnaise 2 tablespoons fat free or 2% milk 3/4 teaspoon prepared horseradish 1 (8-ounce) can crushed pineapple packed in juice 1 cup low fat small curd creamed cottage cheese 1/2 cup chopped walnuts or pecans 1. Dissolve gelatin in boiling water. 2. In 1 cup measurer, blend together salad dressing, milk and horseradish. Using a wire whisk, blend this mixture into the gelatin until smooth. Chill until slightly thickened. 3. Gently fold in undrained pineapple, cottage cheese and walnuts. 4. Spoon into oiled mold or pretty serving dish. Chill until firm. |
