Light and Lovely Tossed Salad (Serves 8)

In just a matter of minutes, it’s easy to put together this delicious salad dressing. Remember that by measuring the honey in the same spoon that was used for the oil, the honey releases with spectacular speed.

4 tablespoons olive or vegetable oil (1/4 cup)
2 tablespoons honey
2 tablespoons white wine or herb vinegar
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon dry mustard
1/4 teaspoon ground pepper
12 cups washed, dried, and torn salad greens
2 cups shredded carrots
1 tomato, cut into wedges

1. In small jar with tight-fitting lid, combine oil, honey, vinegar, garlic powder, salt, mustard and pepper. Shake well. Chill to blend flavors, if time permits.

2. Place greens and carrots in salad bowl or large plastic bag.

3. Just before serving, pour dressing over greens; toss lightly.

4. Garnish with tomato wedges
