Grandmother’s Cranberry Pineapple Salad (Serves 10)

This recipe was my Mother’s favorite cranberry salad. She always made it for our Thanksgiving feast at our family farm in Wisconsin. Now, we carry on her tradition and serve it our home here in Michigan.

2 (3-ounce) packages strawberry or strawberry-banana flavored gelatin
1 and 1/2 cups boiling water
1 (10-ounce) package frozen cranberry relish
1 cup cold water
1 (20-ounce) can juice packed crushed pineapple, undrained
2 cups chopped unpeeled red eating apple
1 and 1/2 cups miniature marshmallows
1/2 cup chopped pecans or walnuts, if desired

1. In large mixing bowl, dissolve gelatin in boiling water.

2. Stir in frozen cranberry relish until thawed.

3. 3. Stir in cold water and undrained crushed pineapple.

4. Chill until partially thickened

5. Fold in chopped apple marshmallows and pecans

6. Pour into attractive serving bowl. Chill until firm.
