Favorite Potato Salad (Serves 8)

Whenever potato salad is on the menu, this is the recipe our family requests. To us, it seems to have the perfect blending of flavors enhanced by just a bit of sugar and vinegar along with celery seeds. Try it and judge for yourself.

5 cups cubed cooked potatoes
2 teaspoons sugar
2 teaspoons vinegar
1 cup chopped onion
1 and 1/2 teaspoons salt
3 teaspoons celery seeds
1 and 1/2 cups reduced fat salad dressing or mayonnaise
4 hard-cooked eggs, sliced or chopped

1. In large mixing bowl, put cubed cooked potatoes. Sprinkle potatoes with sugar and vinegar.

2. Add onion, salt, celery seeds and salad dressing. Toss to blend.

3. Carefully fold in egg slices. Chill.

4. When ready to serve, garnish with additional egg slices and sprinkle with paprika.

Note: For maximum flavor penetration of potatoes, sprinkle sugar and vinegar over warm potatoes.
