Family Friendly Fruit Salad
(Makes 12 half cup servings)
Here is todays version of the Five Cup Salad that many families
have enjoyed over the years. By substituting plain fat-free yogurt
for half of the sour cream, fat grams are controlled and this salad
now can be part of a healthy eating pattern.
2 cups miniature marshmallows
1 cup flaked sweetened coconut
2 (11-ounce) cans mandarin oranges, in light syrup, drained
1 (20-ounce) can crushed pineapple in juice, drained
1 cup reduced-fat sour cream
1 cup plain fat-free yogurt
1.In large mixing bowl, combine marshmallow, coconut, drained mandarin
oranges, and drained pineapple. Toss gently.
2. Add sour cream and yogurt. Thoroughly combine.
3. Chill at least 4 hours and up to 24 hours to develop flavors.
