Cranberry-Raspberry Gelatin Salad (Serves 8)

This classy salad boasts the two marvelous flavors of raspberries and cranberries. It is especially tasty when raspberry yogurt is served as the dressing.

2 (3-ounce) packages red raspberry flavored gelatin
1 and 1/2 cups boiling water
1 (10-ounce) package frozen cranberry with orange relish, unthawed
1 (16-ounce) package frozen red raspberries, unthawed
1 cup ginger ale

1. Dissolve the gelatin in boiling water.

2. Add cranberry relish and red raspberries. Stir to combine. Gently add ginger ale.

3. Chill until the mixture is slightly thickened.

4. Pour into oiled mold or pretty serving dish.

5. Unmold on bed of curly endive. Serve with delight.
