Cranberry Blender Relish (Makes 4 cups)

Just whirl the blender or food processor and you can produce this wholesome cranberry relish. Unflavored gelatin thickens the mixture, producing a beautiful consistency.

1 envelope unflavored gelatin
1 cup cold water
2 cups cranberries (fresh or frozen)
1 navel orange, seeded and cut in eighths
1 medium apple, cored and cut into eighths
3/4 cup sugar
1/4 cup chopped walnuts or pecans

1. Soften gelatin in cold water in saucepan 5 minutes. Warm over low heat until gelatin is dessolved.

2. Place cranberries, orange, apple, sugar and gelatin mixture in blender or food processor.  Cover and blend or process until orange peel in finely chopped.

3. Fold in walnuts. Pour into serving bowl. Cover and refrigerate until well chilled.

4. Garnish with halved orange slices, if you wish. Serve.
