Calypso Salad (Serves 2)

Look for meatless ground crumbles in the freezer section of your favorite grocery store very near the frozen veggie burgers. Combined with salsa these crumbles make both a hearty and tasty topping for a salad filled with interesting vegetables.

3/4 cup salsa
1 cup frozen ground meatless crumbles
2 cups shredded Romaine lettuce
2 cups shredded spinach leaves
1/2 cup drained canned black beans, rinsed
1/2 cup fresh, frozen or canned corn kernels
1/3 cup thin red pepper strips
1 tablespoon lime juice
1/4 cup broccoli sprouts
1/4 cup shredded sharp cheddar cheese

1. Cook salsa and crumbles in medium skillet about 5 minutes or until cooked through, stirring occasionally.

2. On two plates, place Romaine and spinach leaves.

3. Top with beans, corn, and red pepper strips.

4. Sprinkle with lime juice and broccoli sprouts.

5. Top with salsa/crumble mixture.

6. Sprinkle with cheese and enjoy!
