Black Bean Corn Salad (Serves 8 half-cup servings) This tasty combination of black beans and corn can be served as a salad or as a snacking mixture for crisp tortilla chips. Either way it’s certain to wow the taste buds of family and friends.1/4 cup balsamic vinegar 1. In small saucepan, combine balsamic vinegar, cider vinegar, brown sugar, lemon juice, cumin, salt and garlic. Bring mixture to a boil. Reduced heat and simmer 2 minutes or until sugar is dissolved. Cool slightly. 2. In large bowl, combine corn, red pepper, onion, cilantro and black beans. Mix well. 3. Add vinegar mixture to vegetables. Toss well. Cover and chill before serving. |
