Apple-Spinach Salad (Serves 6-8)

Fresh spinach is such a popular and wonderful salad green.  Just add a touch of apple, bacon, almonds and onion to capture a spinach salad to remember.  I think
you’'ll like the quick and easy dressing that goes on this tasty salad.

1 (10-ounce) package fresh spinach, washed and dried
1 large red delicious or other crisp apple, diced
5 slices bacon, cooked, drained, and crumbled
1/3 cup sliced almonds
2 green onions, sliced

Dressing:
1/4 cup salad oil
3 tablespoons tarragon vinegar
1 teaspoon sugar
1/2 teaspoon dry mustard
1/8 teaspoon salt, if desired
Dash of ground pepper

1. In large salad bowl, tear spinach into bite size pieces.      Add apple, bacon, almonds and onions.

2. In small glass jar, combine oil, vinegar, sugar, mustard,     salt and pepper.  Shake well. .

3. Toss spinach mixture with dressing just before serving.
