Cranberry Chicken Salad Sandwiches (Serves 4)

2 cups cubed cooked chicken breast
1/2 cup dried cranberries
1/4 cup finely chopped celery
1/4 cup finely sliced green onion
1/3 cup reduced-fat or regular salad dressing or mayonnaise
1/2 teaspoon salt, if needed
1/4 teaspoon ground pepper, if needed
8 dinner rolls
8 lettuce leaves

1. In a small bowl, combine the chicken, cranberries, celery, green onion and salad dressing or mayonnaise. Add salt and pepper, if needed.

2. Slice rolls. Line with lettuce and top with chicken salad mixture.
