Calico Couscous Chicken Salad (Serves 6)

Do try this mouth-watering chicken salad that features couscous. You’ll find couscous near rice at the grocery store and it is absolutely easy to prepare. Each interesting ingredient adds taste pleasure to this pleasing salad.

3/4 cup chicken broth
1/2 cup uncooked plain quick-cooking couscous
1 tablespoon rice vinegar
2 cups cubed cooked chicken
1 cup frozen peas, rinsed and slightly thawed
1/4 cup chopped green bell pepper
1/4 cup chopped red onion
1/2 cup sliced almonds
1/2 cup dried cranberries
1/3 cup light mayonnaise
3 tablespoons orange juice
1 (11-ounce) can mandarin oranges, drained

1. Bring chicken broth to a boil. Stir in couscous and     cover. Remove from heat and let stand 5 minutes.

2. Fluff the couscous with a fork and toss with vinegar.

3. In large mixing bowl, combine couscous, chicken, peas,     pepper, onion, almonds and cranberries.

4. In small mixing bowl, whisk together mayonnaise and     orange juice.

5. Add mayonnaise mixture to other ingredients. Toss     gently.

6. Gently fold in mandarin oranges.

7. Chill before serving, if time permits.
