Grilled Pork Tenderloin (Serves 8)

When it comes time to entertain very special friends and family for dinner, this melt-in-your-mouth marinated pork tenderloin will bring rave reviews.

1/2 cup lemon juice
1/4 cup reduced sodium soy sauce
4 cloves garlic, minced
2 (3/4 pound, each) pork tenderloins

1. In clear 1-cup measuring cup, combine lemon juice, soy sauce and garlic. Stir to combine ingredients.

2. Put pork tenderloins in heavy-duty resealable plastic bag. Pour lemon juice marinade over tenderloin. Seal and refrigerate about 8 hours, turning occasionally. Remove tenderloin from marinade, discarding marinade.

3. Coat grill rack with cooking spray and place over medium-hot coals. Place tenderloin on rack. Cook covered with grill lid 10 minutes on each side or until a meat thermometer inserted in thickest portion registers 140 degrees.
