Panna Cotta (Serves 4)

Panna Cotta literally translates as “cooked cream” in Italian. This softly set and creamy Italian pudding is so silky-smooth that it slips down easily at the end of a meal. Top with your fruit of choice like the blueberry topping that follows this recipe.

1 and ½ teaspoons unflavored gelatin
1/4 cup water
1/2 cup sugar
1/2 cup half and half cream
1 and 1/ cups reduced fat buttermilk
1/8 teaspoon vanilla

1. In bowl, sprinkle the gelatin over water. Let stand till softened about 5 minutes.

2. In small saucepan combine sugar with half and half. Heat over low heat until sugar dissolves. Remove from heat.

3. Add gelatin mixture. Stir.

4. Add butter and vanilla.

5. Pour into individual bowls or one 1-quart bowl. Chill until set.

6. Serve with blueberry sauce or fruit of your choice.
