Swedish Almond Bars (Makes 60 bars)
This quick and easy cookie bar recipe yields a first class sweet treat. They store beautifully in the freezer and will be popular with family and friends.
4 eggs, at room temperature
1 cup butter, melted
2 teaspoons almond extract
2 cups plus 3 tablespoons sugar, divided
2 and 1/2cups flour
1/2 teaspoon salt
1 cup sliced almonds
1/4 teaspoon ground cinnamon
1. In large mixing bowl with electric mixer, beat eggs for 30 seconds on medium speed. With mixer on low speed gradually add melted butter and almond extract.
Beat in 2 cups sugar.
Add flour and salt and beat with electric mixer until well blended.
4. Pour batter into lightly vegetable oil sprayed 10x15-inch jelly roll pan, spreading batter out to the edges of the pan.
5.Sprinkle almonds evenly over top of batter.
6. Combine 3 tablespoons sugar and cinnamon; sprinkle over almonds.
7.Bake in preheated 325 degree oven for 30-40 minutes or until edges of the bars pull away from the sides of the pan.
8.Cool completely before cutting into bars.
9. Store in flat airtight containers with waxed paper between layers.
