Dandy Date Treats (Makes 3-4 dozen)

These date studded treats would be a welcome addition to any plate of holiday cookies. Their no-bake procedure makes them an efficient way to produce cookies in lightening quick fashion. Top that all off with delicious flavor.

1/4 cup butter
1 cup sugar
1 and 1/2 cups chopped pitted dates (8 ounces)
1/8 teaspoon salt
1 teaspoon vanilla
2 cups toasted rice cereal, such as Rice Krispies
1 cup shredded coconut

1. Combine butter, sugar and dates in large saucepan. Cook stirring constantly,, over low heat until the butter is melted and the mixture resembles a paste

2. Remove from the heat. Add salt, vanilla, cereal, coconut; stir well to combine.

3. When cool enough to handle, squeeze and roll the mixture into 1-inch balls.

4. Place on a waxed-paper lined baking sheet. Refrigerate until chilled.
