Chocolate Cupcakes (Makes 12)

These quick and easy cupcakes are certain to please family members of all ages. The simple ingredient list helps to make this recipe ideal when cooking with kids. Enjoy them plain straight from the oven or frost as desired.

1 and 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup cocoa powder
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup water
1 teaspoon vinegar
Frosting, if you wish

1. In mixing bowl, combine flour, sugar, baking soda, salt, cocoa powder, vegetable oil, vanilla, water and vinegar.

2. Mix ingredients well with a mixer until batter is smooth.

3. Fill paper lined muffin cups nearly full with batter.

4. Bake in preheated 350 degree oven for 20-25 minutes until firm to the touch.

5. Cool. Frost, if desired
